Dragon fruit and Blueberry Jam火龍果藍莓果醬

Dragon fruit is a crazy looking fruit and truly beautiful when cut open. It also comes in two colors: red and white. It has a mild flavor, but when you get a good one it has a really pleasant sweetness to it. We were thinking of something different to make with dragon fruit and because of its vibrant color we decided try out some jam. We had actually never made jam before, but when paired with the blueberries it truly turned out really tasty and was a flavor combination we hadn’t had before! We were pleasantly surprised. Jam goes well on many breakfast items, but we thought to try it out on some panna cotta which was probably the best decision we’ve made all month. The combination is absolutely a keeper.

 

I’ve always stuck with David Lebovitz’s Panna Cotta recipe which is crazy easy and turns out an excellent panna cotta.

 

從來沒想過火龍果能有什麼創意新吃法,但長相奇妙、滋味美妙,讓我們非得來試一下。

由於火龍果本身的味道較清淡,所以決定利用紅肉火龍果的顏色搭配另外一種水果來做果醬。我們抱著走馬看花的心態,在超市看到一盒盒漂亮的藍莓用力呼喊著我們的名字,就決定是它了!畢竟莓果類通常很難出錯,事實也證明火龍果跟藍莓真的互相配合地很好,最後我們還用David Lebovitz的食譜做了幾個奶酪來搭著吃,要打分數的話…100分不能再高了。

  • 3 Red dragon fruit, chopped
  • 1 lemon, juiced and zested
  • 1 cup blueberries
  • ½ cup sugar
  • ¼ cup honey
  • 3 tbls water
  • 1 tsp gelatin

 

  1. Peel dragon fruit and roughly chop it into 2-inch cubes. Place in saucepan. Zest and juice the lemon and add it to the dragon fruit. Turn on heat to medium and stir frequently until it boils. Turn down heat to a simmer. Keep stirring periodically, mash up the dragon fruit until it becomes a smoother texture yet still chunky. Cook for about 30 minutes.
  2. Add sugar and honey and keep stirring until the jam thickens a bit. Another 15-20 minutes.
  3. Combine water and gelatin in large bowl and let it set for 10 minutes.
  4. Add dragon fruit mixture to the gelatin in the large bowl and stir until combined. Let cool until room temperature.
  5. Place in refrigerator until cool. Divide into jars and enjoy!

  • 3 個紅肉火龍果, 切塊
  • 1 個萊姆,削萊姆皮屑及擠果汁
  • 1 杯量的藍莓
  • ½ 杯糖
  • ¼ 杯蜂蜜
  • 3 餐匙水
  • 1 茶匙吉利丁

 

  1. 將火龍果剝皮後粗略切塊(約5公分),放入小鍋子中。開中火並且頻繁攪拌至沸騰,接著把火關小讓火龍果慢慢滾,並不時的攪拌。將火龍果大概壓至糊狀(不用太完美,還有一點點火龍果塊沒關係),繼續煮30分鐘。
  2. 加入糖與蜂蜜,持續攪拌至果醬變得較為濃稠,再煮15到20分鐘。
  3. 在大碗裡加水與吉利丁,靜置10分鐘。
  4. 把鍋裡的果醬倒入步驟3的碗中攪拌均勻,放涼至常溫。
  5. 放入冰箱中冷卻,接著分裝至漂亮的瓶子中就完成囉!
